Crustless Zucchini Quiche
4 eggs
1 cup biscuit mix
1/2 cup oil
1/2 t. salt
1/2 cup grated cheddar cheese
1/2 cup grated parmesan cheese
1 clove garlic, mashed
1 small onion, grated
3 cups zucchini, thinly sliced
1/2 t. marjoram
1/2 t. chopped parsley
Beat eggs, stir in remaining ingredients. Bake in 10 inch pie plate for 35 - 45 minutes at 350 degrees. Golden Brown when done. Serves 6.
