Hummingbird Cake II
3 cups all purpose flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
2 large very ripe bananas(mashed)
1 8 oz. can crushed pineapple(undrained)
1-1/3 cups Wesson oil
3 eggs beaten well
1 teaspoon vanilla
1/2 Cup coconut(optional)
1 Cup chopped nuts (optional)
Preheat oven to 350 degrees. Grease and flour tube pan or layer pans. Place dry ingredients into bowl. Add remaining items. DO NOT BEAT!!! Mix well, moistening all ingredients. This is so easy my 8 year old can do this!! Bake for 45 minutes to 1 hour. Insert toothpick to check doneness. Enjoy! This goes over really well at holiday gatherings or just anytime.
