Hummingbird Cake

3 Cups All Purpose Flour
2 Cups Sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla
1 teaspoon cinnamon
2 cups mashed ripe bananas
1 8 oz. can crushed pineapple, undrained
1 Cup chopped nuts
1/2 Cup coconut
1-1/2 Cups Wesson Oil
3 eggs beaten well
Preheat oven to 350 degrees. Grease and flour 10 inch tube pan. Put dry ingredients
into mixing bowl. Add remaining items to flour mixture. DO NOT BEAT!!!! -Just blend all
ingredients. Put batter into pan. Bake for about 45 minutes to 1 hour. Cool in pan for
about 10 or 15 minutes. Invert onto serving plate and frost with a cream cheese frosting.
Usually a store bought works well.When the cake is slightly warm, drizzle over the top.
The cake is so moist and enjoyed by many!! Great for the holiday get togethers or
anytime.
