Low-Cal Florentine Fillets
500 g / 1 lb. Sole Fillets (or flounder, turbot)
1 Package / 125 g Low Fat Cream Cheese
15 mL / 1 Tbsp. Flour
Dash of Salt and Watkins Lemon Pepper
1 Package / 300 g Frozen Chopped Spinach
15 mL / 1 Tbsp. Butter
1/2 Cup / 125 g Prepared Watkins Chicken Soup Base
Watkins Paprika
Place spinach in shallow microwave dish. Cover and microwave at high for 4 minutes. Separate spinach; cover and microwave at high for 3 more minutes. Drain well and spread on bottom of dish. Season fish with lemon pepper and salt. Spread half the cream cheese, cut in pieces, on fillets. Roll fillets and arrange over spinach. Cover and microwave at high for 6 minutes. Let stand covered. Meanwhile, melt butter and blend in flour. Add broth; cover and microwave at high 2 minutes. Stir and add remaining cheese. Cover and microwave at high for 2 minutes. Season to taste and stir. Pour sauce over fish. Sprinkle with Paprika. Cover and microwave at high for 2 minutes. Let stand covered 2 minutes. Makes 4 servings
