SHRIMP PO BOY
Although I grew up in Ohio and I now reside in Florida, I was stationed in Biloxi, Mississippi while serving in the United States Air Force. After I separated from the Air Force, but was still an Air Force dependent, I worked my way through college as a waitress at a fine seafood restaurant in Biloxi called 'Hook, Line, & Sinker'.
One of the regional recipes I fell in love with was their Shrimp and Oyster Po Boys. Po Boys were born in neighboring Louisiana but were very much at home in Southern Mississippi as well. Our chef made the absolute best Shrimp and Oyster Po Boys anywhere. Yum!
Ingredients:
1/2-1 box frozen shrimp
1/8 cup mayonnaise
1/8 cup cocktail sauce
4 drops pepper sauce
Lettuce
Tomato (optional ~ my hubby and I prefer sandwiches without the tomato)
Sub Roll
Directions:
Cook the shrimp however the package directs. Mix together the mayonnaise, cocktail sauce, and pepper sauce. Spread the sauce generously over the Sub Roll. Slice the lettuce and tomato and add it to the sandwich. Add the shrimp while hot. Serve and eat while warm.
French fries or a steaming cup of Gumbo usually accompany Po Boys.
*This recipe makes one Po Boy. Double the recipe to make two Po Boys. Triple it to make three, and so forth.
