Vidalia Onion Casserole
4-5 Vidalia onions, sliced in ¼” slices (or other sweet onion)
¼ c. butter
¼ c. sour cream
¾ c. Parmesan cheese
10 Ritz crackers, crushed
Saute onions until tender. Stir in sour cream. Pour ½ mixture into greased 1 qt. casserole. Sprinkle with cheese. Pour other ½ into dish. Top with crushed crackers. Bake uncovered 350 for 30 minutes.
