VEGETABLE WELLINGTON (aka VEGETABLE STRUDEL)
2 sheets puff pastry dough, thawed (sold in frozen-food section)
2 red potatoes
2 zucchini
1 green bell pepper
1 red bell pepper
½ onion
Grated cheese (jack, pepper jack, or recommend Mexican Mix from Costco)
Place one sheet of dough on Parchment Paper on Big Baking Stone. With Mandolin Slicer, thinly slice all vegetables and layer, with potatoes on bottom. Sprinkle with seasoned salt. Cover with cheese. On No Mess Dough Disc, roll Lattice Pastry Maker across second sheet to within 1" of edge, pressing firmly to create steam vents. Place over vegetables, stretching to open vents; seal edges. Brush with beaten egg or cooking spray (or lattice half of
each sheet and fold over the vegetables to create two smaller strudels). Bake at 375º for 30-40 minutes. Cut into squares with Handy Grip Pizza Cutter
