copper pennies

2 lb. carrots
1 small pepper chopped
1 medium onion sliced thin
1 can tomato soup
1/2 cup salad oil
1/4 cup granulated sugar
1/4 cup brown sugar
1/4 cup vinegar
1 tsp prepared mustard
1 tsp worsherchire
sauce salt & pepper
Slice carrots-cook until tender, but not real soft. When cool,alternate layer carrots, pepper & onion. Pour remaining ingredients over all. Will keep well better when made several days ahead of serving. Excellent as a side dish served cold to complement any main entree.
