SPICY STUFFED MUSHROOMS

4-6 medium to large Portobello mushrooms
1/2 cup finely chopped onions
1/2 cup finely chopped pepperoni
4-6 cloves finely chopped garlic

1 sleeve finely crushed Ritz Crackers
1/2 cup shredded Mexican cheese blend
1 tsp red pepper flakes
1 cup chicken broth

Preheat oven to 325. wash and drain mushrooms, remove stems and chop. Put pepperoni, onions, mushroom stems in fry pan and saute 15 minutes untill onion is tender. Mix crumbs, cheese and pepper flakes in a bowl. Add onion mixture. Mix throughly and add chicken broth. Place mushrooms in a shallow pan with a 1/4 inch water. Spoon mixture into mushrooms. Extra cheese may be sprinkled over the tops. Put in oven and bake 25 minutes. Serve immeaditely
Extra cheese may be sprinkled on the top if desired.
