Getting Kids to Eat Vegetables

Have you ever made peas and carrots for dinner and put them on your child’s plate? If you have, then you now know the many ways children will hide these green and orange pieces from their plates. They will lose them on the floor. They will feed them to the dog. They will hide them in their napkin. They will scoot them under another item on their plate. Kids will try just about anything to not eat the peas and carrots sitting in front of them.

Take those same veggies and add them to fried rice or to fettuccine alfredo and all of a sudden kids gobble them down.

We love dips in my house. I make spinach dip, artichoke dip, broccoli dip and a cauliflower dip. Here are a few recipes for dips that my kids have enjoyed over the years:

Cauliflower Dip

1/2 head cauliflower
1 green onion with top, chopped into 1 inch pieces
3 tablespoons sour cream (you can also use yogurt or mayonnaise)
2 tablespoons ranch dressing mix (powder)

Break cauliflower into florets, for cooking. In medium saucepan, bring about 1 1/2 inches of water to a boil. Add cauliflower, cover and simmer until tender, about 15 minutes. Run under cold water to stop the cooking; drain well.

In a food processor, puree cauliflower and green onion until smooth. Add the sour cream and dressing mix. Process 1 minute. Put into a serving dish and chill before serving.

Spinach Dip

1 package frozen spinach, thawed, drained and squeezed
1/2 cup chopped parsley or parsley flakes
1/2 cup green onion, chopped
1/2 teaspoon dill seed
1 teaspoon seasoned salt
1 cup mayonnaise
1 cup sour cream
2 tablespoons lemon juice

Mix all ingredients and chill overnight so flavors can blend.

Note: I use both light sour cream and light mayonnaise and it’s still delicious. And finally, a very simple artichoke dip:

Artichoke Dip
8 ounces shredded mozzarella cheese
8 ounces shredded Monterey Jack
1/2 cup mayonnaise
1 can artichoke hearts, drained

Cut artichoke hearts into small pieces. Mix all ingredients together. Bake at 350 degrees, about 25 minutes until melted and lightly browned.

Another favorite way to help kids eat vegetables is to put the vegetables into a marinara sauce. Cut the vegetables up fairly small. They will add a wonderful flavor to the sauce and the sauce will be nutritious for the kids. The sauce can go over any type of noodle. It can also be poured over cooked fish or chicken.

My final suggestion is to start a vegetable garden. Kids love to eat what they themselves have grown. When the child has helped water, weed and cultivate the garden, it is so much fun for them to pick the vegetables and then eat them. They are so proud to eat their own work.

These are just a few alternative to peas and carrots on a plate.

Vegetable dips seem to work well for my kids too. Another thing I found that works is cheese sauce, it won't work for everything, but it's good over broccoli, califlower, or carrots.

I love sauces. Cheese sauce is good...so is cream sauce :)

I should have seen this when my grown kids were little!

I'm ashamed to admit but both my grown sons have NEVER eaten a salad! They claim to hate lettuce. What's to hate with lettuce? How would they know without even trying.

Good ideas Audrey,

My boys are a little passed the stage of not wanting to eat their vegetables, they are 6 and 9, but I remember going through this about 3-4 years ago and making them eat at least try a bite full of veggies before they got the rest of their meal. It worked, but I could see it backfiring and have kids refusing to eat.

One thing that get's my kids eating extra vegetables now is we buy like one of those packs in the salad section that has a variety of vegetables like carrots, snap peas, broccoli, etc. and I let the boys make little foil packets and experiment with seasonings and a little butter. We then place it on the BBQ grill, they usually gobble them up.

Lettuce really has no taste. It's whatever you put on it, like a salad dressing.

My dd is odd lol...she loves fruit and veggies and prefers them over the other snacks on the market.She has always been this way,even when I fed her jar food,she prefered veggies over the dessert items.She absolutely loves salads and would eat just that If I let her lol.

That is great. My friends daughter was like this too and she would rather bite into a big Tomato than an apple. She would even eat rings of onion.

If she likes to eat Salad, try to avoid iceberg lettuce because it has very little nutritional value - maybe try using romaine or spinach if you don't already.

Great tips, Audrey! I recently discovered the joy of hiding veggie purees in the "regular" food the kids will eat. Actually, it works well with myself since I seem to still have a picky eater kid in me.:o

I have lots of foods I don't/won't eat. But even at my age, I'll try something new and actually like it LOL.

Those recipes sound dee-lish! Putting veggies in pasta, rice, or even pizza is a great way for children to get used to eating veggies.

I'm definitely gonna try the cauliflower dip!

Weird. When I was growing up I loved to eat veggies. I still do. My sister was just the opposite. My mom had to force her to eat them. She eats them now, but just a different story growing up.

She really wanted to but she does throw up whenever she tries.

I don't think she's allergic to veges she just don't like them just like his dad. I have given up on her eating vegetables. Good thing she eats fruits.

I've been trying to get my kids to eat veggies for the longest time, and I found that they are more willing to eat them when they help me cook! I let them do the easy things in the kitchen and they love it!

Check out the newest Jen & Barb's Mom Life episode "Is Your Kitchen Family Friendly?" Jen and Barb, Mom Life (http://ow.ly/1vKXw) I learned some great tips on how to make the kids more self sufficient in the kitchen. Their videos give such good advice!

Not only is it tough to get my kids to eat vegetables, but I feel like lately they're obsessed with the tv and video games!! Not only are they not eating their veggies, but now I feel like they're not getting enough outdoor exercise. I looked on MomLife, of course, the first place I go when I have mommy questions, and they had a video on kids getting enough outdoor play - perfect for what I needed. YouTube - Are Your Kids Getting Enough Outdoor Play? (http://bit.ly/cPFHR3) They have some pointers on how to get them outside and play more sports. I guess I don't feel SO bad that they're not eating their vegetables as long as their getting some outdoor play!

I make a lot of zucchini, carrot & pumpkin muffins and I really stuff a lot of veggies in them! My children love them for breakfast. I've heard of spinach, but haven't had the nerve to try that yet (although, I slice it up really skinny and put it in mac and cheese or other pasta -- it's too small to pick out :).

Also, I always use oats and whole wheat flour for most of the flour so they get extra nutrition.
