Indian Masala Chai (Tea)

Masala Chai (Tea), an aromatic spiced tea, has been the Indian drink of choice for hundreds of years. It is the perfect blend of freshly ground spices (chai masala) like cloves, cinnamon, nutmeg, ginger, cardamom and pepper, added to a
boiling pot of loose leaf tea and milk to make a delicious, satisfying and healthy beverage.
To make chai for 2 you will need:

2 cups water
1 cup whole milk
2 teaspoons any unflavored
Tea leaves OR
2 tea bags of unflavored tea
2" piece of fresh ginger
2 Green cardamoms crushed
1 small cinnamon stick.
Sugar to taste.

Method:
In a pot boil the water and milk together. When it comes to a boil add 2 teaspoons of tea leaves. You can make it stronger if you want. Do not use green tea as it will not give you the color. Add the ginger, cardamom and cinnamon stick. Reduce the heat as the tea rises up and tends to boil over. Boil on simmer for 3 minutes until the flavors are released. The tea should become
golden brown in color. Take off the heat. Strain the tea into a tea pot. Add sugar to taste. Serve hot.

Accompaniments: Tea can be served with sweet or salted Biscuits or Pastries.
