Zucchini Nut Bread
Zucchini Nut Bread
4 eggs
2 cups sugar
1 cup vegetable oil
3 1/2 cups flour
1 1/2 tsp. Baking Soda
1 1/2 tsp. Cinnamon
2 tsp. Vanilla
1 tsp. Baking Powder
1 tsp. salt
1/2 tsp. Nutmeg
1/2 tsp. Ginger
2 cups grated unpeeled Zucchini
1 cup chopped nuts
Preheat oven to 350
Grease 2 - 9" x 5" loaf pans
Beat eggs in large bowl till light and fluffy
Gradually add sugar, beating until thick and lemon coloured.
Beat in oil.
IN SEPARATE BOWL combine flour, baking soda, cinnamon, baking powder, salt, nutmeg, & ginger.
With mixer at low speed, add dry ingredients and Zucchini to egg mixture.
Blend mixture thoroughly.
Stir in walnuts & vanilla.
Divide mixture between the 2 greased loaf pans.
Bake at 350 for 55 - 60 minutes.
Cool in pan 10 minutes.
Remove from pans-cool completely.
Store.
