Pizza Pie Muffins
2 c. flour
1/4 c. chopped pepperoni
2 Tbsp. grated parmasean cheese
1 Tbsp. baking powder
1/2 tsp. dried Italian seasoning
1/2 tsp. salt
1/2 c. milk
1/2 c. pizza/spaghetti sauce
3 Tbsp. olive oil
1 egg
Heat oven to 400 degrees. Line 12 cup muffin pan with paper baking cups. In large bowl, stir together flour, pepproni, cheese, baking powder, Italian seasoning & salt.
In small bowl, beat milk, sauce, oil and egg. Pour wet ingrediants over flour mixture and stir just until moistened. Divide mixture evenly in baking cups.
Bake 20 min. or until tops are golden brown. Cool pan on wire rack for 10 min. Remove paper cups from pan and cool completely.
To freeze: Wrap cooled muffins in plastic wrap and then foil. Can freeze 2-3 months. Will thaw in about 3 hours.
