"Country Muffins"
1 1/4 cups rolled oats -- divided; 1 1/4 cups flour -- divided; 1 tsp. baking powder; 1 tsp cinnamon; 1/2 tsp baking soda; 1/2 tsp nutmeg; 1 can (15oz.) sweet potatoes/yams -- drained and mashed; 1 cup light brown sugar, packed and divided; 1/3 cup oil; 1/4 cup skim milk; 1 egg; 2 tsp vanilla, divided; 1 Tbsp butter, melted. Heat oven to 400'. Line 12 muffin cups w/paper cups. In a large bowl, combine 1 cup oats, 1 cup flour, baking powder, baking soda, cinnamon and nutmeg; mix well. Stir in sweet potatoes, 3/4 cup brown sugar, oil, milk, egg and 1 tsp vanilla. Mix until well moistened. Fill paper cups 3/4 full with batter. In a medium bowl, combine remaining ingredients with butter -- mix well and sprinkle over batter. Bake 15-20 minutes until golden. Serve warm or cool.
