Pumpkin Chocolate Chip Muffins
3/4 C. sugar
1/4 C. applesauce
4 egg whites
3/4 C. canned pumpkin
1/4 C. buttermilk
1 C. all-purpose flour
1/2 C. wheat flour
3/4 tsp. Watkins Baking Powder
1/2 tsp. baking soda
1 tsp. Watkins Pumpkin Pie Spice *
1/4 tsp. salt
1/2 C. mini chocolate chips
Mix sugar, applesauce, and egg whites. Add pumpkin and buttermilk. In a separate bowl, mix together flours, baking powder, baking soda, pumpkin pie spice and salt. Add to pumpkin mixture and mix well. Fold in chocolate chips.
Spoon in 12 muffin cups which have been sprayed with no-stick spray.
Bake in 400 degree oven for 20-25 minutes.
