Blueberry-Zucchini Bread
3 eggs
2 cups sugar
1 cup white flour
1 cup wheat flour
1 cup oil
1 tablespoon cinnamon
1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
1 1/2 teaspoon vanilla
1 teaspoon salt
1 1/4 cups fresh blueberries
2 cups grated zucchini
Beat together the eggs, sugar, oil and vanilla with a mixer until thick and well combined. Combine the remaining dry ingredients and carefully blend into wet ingredients with a wooden spoon or spatula. You want it just moistened, do not overmix. Fold in blueberries being careful not to break the berries. Pour batter into two greased bread pans. Bake at 350 degrees for an hour or until a toothpick comes out clean.
