Very Blue Blueberry Muffins

These muffins use mashed blueberries and whole blueberries for a very blueberry muffin.

1 1/2 cups flour
2 1/2 teaspoons baking power
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup sugar
2 eggs
1/2 cup milk
1 ounce butter, melted
1/2 orange rind/grated
1 teaspoon vanilla
3 ounces blueberries, mashed
8 ounces whole blueberries
1/2 sugar mixed with 1/4 teaspoon nutmeg for sprinkling on top

Preheat oven to 375. Lightly grease muffin pan. Sift the flour, baking powder, salt and nutmeg. Pour into bowl. Add sugar. Make a well in the middle of the dry ingredients.

In a separate bowl beat the eggs, milk, melted butter, grated orange rind and vanilla. Stir in the mashed blueberries. Pour into the well and lightly stir. Do not over mix. Lightly fold in the whole blueberries. Spoon batter into the muffin cups, filling each to almost full. Sprinkle each with the sugar-nutmeg mixture. Bake until risen and golden, 25-30 minutes. Toothpick should come out with just crumbs. Allow to cool about 2 minutes, then transfer to wire rack to finish cooling.
