Veggie Swiss Omelet
Cooking Spray
1/3 cup chopped zucchini
1/4 cup chopped green onions
1/4 cup chopped tomato
3 eggs
2 tbsp water
1/4 tsp celery seeds
1/4 tsp pepper
1/8 tsp salt
1/4 cup (1 ounce) shredded Swiss Cheese
Saute zucchini, onions, and tomato in a 6 inch skillet coated with cooking spray. Set aside. Beat egg, combine with next 4 ingredients. Wipe skillet. Coat with cooking spray; place over medium heat until hot. Spread half of egg mixture in skillet. Cover, reduce heat to low. Cook 5 minutes or until puffy. Turn omelet; cook 3 minutes or until golden. Slide onto plate. Spoon half of vegetables over half the omelet; sprinke with 2 tbsp cheese. Fold. Repeat procedure. Serve with cantaloupe, if desired. Yeild: 2 Servings
