2 teaspoons butter or margarine
1 large egg
1 tablespoon milk
1/8 teaspoon salt
1 English muffin, split and toasted
1 (1-ounce) cooked ham slice
1 (3/4-ounce) process American cheese slice
1. Melt butter in a small nonstick skillet over medium heat. Whisk egg, milk, and salt; add to skillet. Cook, without stirring, until egg begins to set on bottom.
2. Draw a spatula across skillet to form large curds. Cook until egg is thickened but still moist (do not stir constantly). Fold egg over to fit on muffin. Place egg on bottom half of muffin; top with ham and cheese. Cover with muffin top. Yield: 1 serving.
