Pizza Pancakes
2 cups baking mix
1 cup milk
2 eggs
1/2 cup (2 oz) mozzerella cheese, shredded
1/2 cup pepperoni, chopped
1/2 cup tomato, chopped
1/4 cup green pepper, chopped
2 tsp italian seasoning
pizza or speghetti sauce (opt)
parmesan cheese (opt)
Heat skillet, grease if necessary. Stir in baking mix, milk, and eggs in a large bowl until well blended. Stir in all remaining ingredients. Batter will be thick. Pour batter by 1/4 cupfuls onto the skillet. Cook until edges are dry and turn and cook until golden brown. Serve topped with pizza sauce, parmesan cheese, additional pepperoni, and/or green pepper.
