German Pancake with Apples
Pancake:
3 eggs
3 egg whites
1 ¼ c flour
¼ tsp salt
1 ¼ c milk
1 T margarine or butter
Apple topping:
4 c sliced and peeled apples
3 T sugar
1 T brown sugar
½ tsp cinnamon
2 tsp margarine or butter
To make pancake: In bowl, beat eggs and egg whites slightly. Add flour, salt and milk to egg mixture. Beat with beater until combined. Set aside. Place 1 T margarine in 9x13 pan (or large cast iron skillet). Heat in 425 degree oven for 2 to 3 minutes, or just until margarine sizzles. Remove pan from oven. Tilt pan to cover bottom with margarine. Immediately pour batter into hot pan. Bake in 425 degree oven for 20-25 minutes or until puffed and golden brown.
To make filling: Meanwhile, in large bowl, combine apples, sugar, brown sugar and cinnamon. Toss to coat. Melt 2 tsp margarine in skillet over medium heat. Add apple mixture. Cook 10 minutes or until apples are tender, stirring occasionally. Spoon apples onto baked pancake. If desired, sprinkle with additional cinnamon. Serve immediately.
