Country Breakfast Casserole
Ingredients:
2 12 oz. pkgs frozen hot pork sausage (thawed) (you can sub this with 1 hot and 1 mild)
1 2 lb. pkg southern style frozen hash browns
2 8 oz pkgs (4 cups) shredded colby jack cheese
1 medium onion minced (1 cup)
1 cup milk
1/2 tsp salt
6 eggs slightly beaten
1 jar salsa
In medium skillet, brown sausage and drain.
In large bowl combine the following: sausage, hashbrowns, 3 cups chees, onion, milk, salt, and eggs.
Pour mixture into greased 9 x 13 glass baking dish
Top with remaining cheese.
Refrigerate covered several hours or overnite
Bake uncovered in preheated 350 degree oven for 50 - 55 minutes
(until knife inserted in center comes out clean)
Let stand 10 minutes covered
Server with salsa on top
Makes 8 - 10 servings
