Add a little protein to your pancake breakfast!
1 cup unbleached flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sugar
2 eggs
1 cup cottage cheese
1/2 cup milk
1/2 teaspoon vanilla
2 tablespoons canola oil (plus more for the pan)
In a large mixing bowl, blend the flour, baking soda, salt and sugar. In a separate mixing bowl, combine the eggs, cottage cheese, milk, vanilla and oil. Add the flour mixture to the liquid ingredients, stirring until completely blended.
Add a small amount of canola oil to a skillet or griddle. Heat over medium. Drop about a quarter cup of batter onto the hot skillet. Cook 2-3 minutes, checking the underside and adjusting the heat as needed. Flip when browned and continue to cook on the other side until lightly browned.
My kids love these sprinkled with powdered sugar!
