Fresh Fruit Cake
The Soak:
I use fresh fruit. What ever you have. Amounts vary, make as much soak as you want. (Chopped)
Orange peel. (Chopped)
Maraschino Cherries. (Chopped)
Dark Jamaica Rum-Wine-Brandy-Whisky-vanilla .
Put in a covered jar, soak for a week, all year long.
Strained Soak can also be enjoyed nip by nip, Don't forget to replace with more of the same.
Nuts any kind chopped coarse, and coated with flour, again amount varies.
The Cake:
1 package pineapple cake mix
3 eggs
1/2 cup oil or melted real butter
Mix.
Add drained fruit and as much liquid to make a wooden spoon stand up in it.
A cup of flour may be added if needed, if too much liquid is used.
Add nuts.
Pour into a bunt or tube pan Sprayed with Bakers Joy Baking Spray.
Bake till done, about an hour.
Try using a strawberry cake mix with fresh strawberries following same recipe. Top slices with whipped cream and more strawberries.
