Mom's Best Chicken Casserole
2 skinless and boneless chicken breasts, cut in half
1 can cream of mushroom (chicken, celery or asparagus) soup
1 8oz. container sour cream
1 small jar (3 oz) of dried beef
2 tbsp. bacon bits
Optional: small jar of pimentos or can of mushrooms (drained)
Spray the cassarole dish with non-stick spray. Cut dried beef into small strips or pieces and spread over bottom of pan. Place chicken on top of dried beef. Mix together can of creamed soup and sour cream. If you are going to add the mushrooms or pimentos, add them to the soup mix. Spread over top of chicken. Cover with foil and bake at 350 for 50 minutes - covered. Remove foil and continue baking for additional 10 - 15 minutes or until browned. Serve with either rice of egg noodles. Add a green salad and bread and you have the perfect meal with little effort. This is so easy, your children can help prepare it! I have never had any leftover!
