"Crunchy Oat-Apricot Bars"
2 cups regular oats; 1 3/4 cups flour; 1 cup packed brown sugar; 1/2 cup reduced-calorie stick margarine; 1 1/2 tsp vanilla; 1 1/2 cups apricot preserves. Preheat oven to 350'. Coat 9x13" pan with cooking spray. Combine first 5 ingredients in a large bowl. Cut margarine into mixture with pastry blender or 2 knives. Press half of oat mixture over bottom of dish. Spread apricot preserves over oat mixture. Sprinkle remaining oat mixture oover apricot preserves and press gently. Bake 35 minutes until bubbly and brown. Cool in pan on wire rack.
