Default Peanut Butter Banana Cookies

Peanut Butter Banana Cookies

3/4 cup packed brown sugar
1/2 cup softened butter or margarine
1/4 cup peanut butter (chunky or creamy, you choose)
1 egg
1/2 teaspoon vanilla
3/4 cup mashed bananas (about 2 small bananas)
3 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
Frosting:
1 cup powdered sugar
1/4 cup softened butter or margarine
1 square unsweetened baking chocolate, melted slightly and cooled
1 - 2 tablespoons milk

Heat oven to 350 degrees. Lightly grease cookie sheets. In large mixing bowl, combine brown sugar, 1/2 cup butter/margarine, peanut butter, egg and vanilla. Beat at medium speed of electric mixer until light and fluffy. Add bananas. Beat at low speed just until combined. Add flour, baking soda and salt. Beat at low speed until soft dough forms.

Drop dough by heaping teaspoons 2 inches apart ...onto prepared cookie sheets. Bake 10 to 12 minutes, or until set. Cool completely.

In small mixing bowl, combine frosting ingredients. Beat at low speed of electric mixer until smooth. Spread frosting evenly on cookies. (I have found that it is sometimes easier to lower the cookie into the frosting and swirl it to give it a smoother layer over the whole cookie) Let dry completely before storing.
