Hobo Meatball Stew
1 pound ground beef
1 1/2 teaspoons salt divided
1/2 teaspoon pepper divided
4 medium potatoes, peeled and cut into chunks
4 medium carrots cleaned and cut into chunks
1 large onion, cut into chunks
1/2 cup ketchup
1/2 cup water
1-1/2 teaspoons vinegar
1/2 teaspoon dried basil
In a bowl combine beef, 1 teaspoon salt and 1/4 teaspoon pepper. Mix well and shape into 1 inch balls. Brown meatballs on all sides in a skillet over medium heat and drain. Place potatoes, carrots and onion in crock pot and top with meatballs. Combine the rest of the ingredients including the remaining salt and pepper and pour over meatballs. Cover and cook on high for 4-5 hours or until vegetables are tender. 4 servings.
