Simply Nutty Pineapple Casserole
1 20 oz. can crushed pineapple
1 box butter cake mix
7 oz shredded coconut
4 oz pecans pieces
1 cup real butter (heat til soft)
Heat oven 400 degrees
Spray 8 X 11 glass casserole dish with non stick butter flavored cooking spray.
Pour pineapple with juice into pan.
Spread cake mix over pineapple evenly.
Top with coconut.
Pour 3/4 cup butter over all and bake 30 minutes.
Remove from oven and top off with pecans and baste them with the remaining 1/4 cup butter and bake an additional 20 minutes until edges are golden brown.
Serve warm with ice cream.
