Luscious Lemon Dessert
Cookies and Lemon Cream Dessert
Crust:
1 package (16 oz) chocolate sandwich cookies
2 Tsp butter or margarine, melted
Filling:
2 boxes (3 oz each) Lemon-flavored gelatin
3/4 cup boiling water
1 package (8 oz) cream cheese, softened
1 jar ( 7 oz) marshmallow Cream
1 tub (12 oz) frozen whipped topping, defrosted
Garnish:
Lemon Zest or Chocolate Curls
Place 15 cookies in a plastic bag and crush. Combine crumbs with butter. Press into bottom of a 9" springform pan. Stand whole cookies on end and line edges of pan.
In a small bowl, dissolve gelatin in boiling water. Add 2 ice cubes and stir until melted.
In large bowl, beat cream cheese and marshmallow cream until smooth. Gradually whisk gelatin mixture into cream cheese mixture, beating until smooth.
Reserve a generous cup of whipped topping for garnish; gently fold in remaining whipped topping.
Evenly spoon lemon cream mixture into prepared pan. Cover and refrigerate at least 40 minutes until firm or overnight.
Remove side of pan. Add reserved whipped topping as garnish. Sprinkle Lemon zest or chocolate curls on top.
To serve, cut between cookies. Makes 14 slices.
