Lemon Squares
1 cup flour
1/2 cup butter or margarine, softened
1/4 cup confectioner's sugar
1/4 t. salt
2 eggs
1 cup granulated sugar
1/2 t. baking powder
2 T. lemon juice
Heat over to 350 degrees. Cream flour, butter and confectioner's sugar. Press evenly in bottom of ungreased pan 9 x 9x 2. Bake 20 minutes. Beat remaining ingredients until light and fluffy, about 3 minutes. Pour over hot crust and bake about 25 minutes longer or until no imprint remains when touched lightly in center. Cool and cut into 2 inch squares. Makes 16.
