Chili
3 chopped onions
3 chopped green pepper
3 cloves garlic
2 lbs. ground beef
1 large can tomatoes
1 can tomato paste
2 cans fancy kidney beans
2-8 T. chili powder
1 T. sugar
2 bay leaves
1 t. cumin
1 t. basil
1 pinch cayenne
2 t. salt
pepper and paprika
2 T. red wine vinegar
Saute onions, peppers, garlic. Brown beef and add to vegetables. Add tomatoes, tomato paste, and seasonings. Simmer at least 1/2 hour until thick. Add beans. Serve over rice.
