Jamaican Curry Chicken
I am just giving you the basic recipe. How much to use will depend on how many you are cooking for.
Skinned, deboned chicken meat(2-3C diced); potatoes[peeled and cut into 1/4s-(2-21/2c)]; onions(1/2c)diced & garlic(2small cloves)diced; thyme(1tsp to sizing); salt&pepper to taste; jamaican curry(1-2TBS, at least); 3/4C water
Saute onions and garlic. Do not burn. Then add the chicken till white throughout. Add thyme(at least 1tsp) if 2C of chicken. Add salt, pepper and about 2TBs of curry or till colour is med.-dark yellow. Add about 3/4C water. Cover and simmer on med.-high heat depending on your stove until the potato springs enough juice for a thick gravy and is soft to the touch. Of course, stir a few times.
