Tuna and Corn Fish Cakes
1 1/2 c. mashed potatoes
7 oz. can of Tuna
1/2 canned sweet corn
2 tbsp. chopped parsley
1 cup of bread crumbs
salt & pepper to taste
lemon wedges, for garnish
Place mashed potatoes in a bowl, stir in tuna fish, canned sweet corn and chopped parsley. Season to taste with salt & pepper. Shape into 8 patties. Press the fish cakes into 1 cup of fresh bread crumbs to coat them lightly, then place on a baking sheet. Cook under a moderate grill until crisp and golden, turning once. Serve hot garnished with fresh lemon wedges.
