Baked Fish with Lemon Dressing
1 small whole fish or fillets (about 5 lbs)
1/2 cup butter, melted
2 tbsp grated onion
4 cups bread crumbs
4 tbsp lemon juice
2 tbsp parsley, chopped
1 tsp sage
1 tsp salt
1/4 tsp pepper
bacon slices
Clean fish, removing skin. If using whole fish, split one side of backbone almost to skin. Stir onion and bread crumbs into melted butter. Add lemon juice, parsley, sage, salt, and pepper. Fill fish with dressing and wrap in cheesecloth. Place on greased baking pan or use couple of slices of bacon under the fish. Lay a few strips of bacon over the top of the cheesecloth to keep fish from getting too dry. If using fillets: Layer fish, dressing and fish in a casserole dish. Increase quantity of dressing as needed to fill fish or casserole. Bake at 400 degrees for 1 hour (approximately 10 minutes per pound).
This dish is outstanding with salmon; white fish is also good.
