~Almond Biscotti~
Ingredients
2 large eggs
1/2 cup sugar
1/2 cup oil
1 Tbsp anise extract
11/2 tsp baking powder
11/2 cups all-purpose flour
3/4 cup sliced almonds toasted
powdered sugar
350 degree oven
Spray a cookie sheet with non-stick spray.
Whisk eggs, sugar, oil and anise extract until blended.
Add baking powder then flour mix until combined well.
Fold in Almonds.
Spoon 1/3 of the dough onto a section of the cookie sheet.
With floured hands form dough into a 11 inch x 2 inch strip.
Repeat with remaining dough.
Bake 20-23 minutes on top rack of oven.
Cool 5 minutes, transfer to cutting board slice strips 1/2 inch thick.
Return to cookie sheet laying strips on sides Bake 5-6 minutes on each side.
Cool and then dust with powdered sugar.
Store in airtight container for up to 2 weeks or freeze up to 2 months!
You can wrap each biscotti in clear or colored saran and tie the ends with ribbon. Nice addition to a basket along with gourmet hot chocolate, coffee or tea and mug!
