SCOTTISH SHEPHERD'S PIE ~ Anytime comfort food ~ "
A traditional dish from Scotland, this pie-or dinner is easy to prepare. I inherited this from my hubby's family side of great cooks from Prince Edouard Island. Yep he's part Scottish, part Irish and part Mystery Meat !!! LOL
*** this only serves 2
Ingredients:
1/2 lb chopped cooked beef
1 small onion, cooked and chopped
1 tsp ketchup (chutney or home made tomato katsup)
salt and pepper ( to taste)
1 cup leftover gravy ( I dont live in the good'ol days-mixture or packet made up will do-~Knorr or Bovril whatever...)
2 cups seasoned mashed potato ( with my family, mashed potatos recieve plain yogurt/or sour cream, Mrs. Dash garlic and lemon dried spices, a bit of Philly and when at Grandmaman's a tin /container of 'Onion chip dip- then whip those 'taters 'till fluffy)-just yummy !!!
2 tbsp butter or magarine
cayenne pepper/we use paprika
parsley flakes
Preheat oven to 350 f.
Mix together meat, onion,ketchup, salt,pepper and gravy.
Place in a greased baking dish.
Cover with mashed potato.
Dot with small pieces of butter.
Bake for 20-30 minutes.
Sprinkle with cayenne pepper and decorate with a little parsley.
* if cayenne is too much for you, like my family, I just sprinkle paprika for colour.
Serve hot.
Serves 2 ***we always triple this preparation.
VARIATION:This pie can be made using any type of meat and gravy. If you love fish use white fish and a tasty white sauce or creamed soup for the meat and gravy.*** I make this often times and freeze, say a dinner for 4,, to have for those days...you're too tired to cook, loved anytime...and I have brought this to recovering -from hospital friends, -new moms...with a how-to cook label...as a welcome to the neighborhood gift...add bottle of wine and a 'baguette'...Hope you enjoy this *variation-on'an'old'theme'type dish
PS:- a small amount of fresh dill in the mashed potatos is lovely too...if you love dill !!!
