3 Tablespoons olive oil
2 cloves fresh garlic, pressed or minced
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
1 1/4 pounds zucchini (about 3 mediums)
1/2 cup freshly grated Parmesan cheese
Preheat broiler.
Mix together olive oil, garlic, basil, and oregano in small bowl. Trim ends off zucchini, then slice diagonally into 1/4-inch-thick ovals. Place zucchini in single layer on broiler pan. Brush each slice with the olive oil mixture and top with Parmesan cheese. Broil for about 5 minutes, until cheese is lightly browned and zucchini is just tender with pierced with a fork. Serve hot. Serves 5 to 6.
