No Cook/summer Cheesecake

Serves 8, In A 13" X 9" Pan
Put The Beaters,mixing Bowl, 1 Can Evaporated Milk In Freezer. Till Evaporated Milk Has Ice Crystals In It. You Can Hear Them When You Shake The Can. At Least An Hour.
Mix 1 Small Package Lemon Jello With 4 Oz. Boiling Water Till Dissolved Completely. Set Aside To Cool And Slightly Thicken, But Not Set Completely.
Put 1 Cup Sugar, 2-8oz. Blocks Of Cream Cheese,room Temperature, 1 Teaspoon Vanilla, 1 Teaspoon Grated Lemon Peel Mix Together Till Smooth And No Lumps.
Crush One Packet Of Graham Crackers. Mix With 2 Tablespoons Of Butter And (1/4 Cup Sugar Optional)
Spread In The Bottom Of Pan. Reserve 1/4 Cup For Topping.
Add Cooled Jello Mixture To The Evaporated Milk Mixture And Beat On High Until Frothy And Thick. It Will Take Some Time To Beat It. Then Add The Cream Cheese Mixture To The Whipped Milk And Beat Together Till Smooth.
Pour Into The Pan With The Graham Crackers On The Bottom. Top With The Rest Of The Crumbs.
Cover With Plastic Wrap.
Refridgerate 6 To 8 Hrs. Or Overnight Is Best
