" SALMON PIE "
This is really quite good. Reminds me of salmon patties. Although the recipe doesn't call for it, I like to add a little chopped onion. Seems to perk it up. Also, if dont' want to use pie shell, can just bake as a casserole.
In small saucepan, melt 2 tablespoons butter. Blend in 3 tablespoons flour. Gradually add 1 cup milk, stirring constantly, cook until thickened. In large bowl:
1 can drained flaked salmon
1 (8 oz) can drained peas
1 egg
1 tsp. salt
1/8 tsp pepper
1/2 cup chopped pimento
Mix sauce with ingredients in bowl. Pour into baked pie shell (or shallow baking dish). Bake at 425 degrees for 25-30 minutes. Cook 10 minutes before cutting.
