Merry Christmas Cookies

Mix throughly:
1/3 cup Crisco
1/3 cup sugar
1 egg
2/3 cup Honey
1 tsp. Lemon Flavoring

Sift is separate bowl:
2 3/4 cups Flour
1 tsp. Soda
1 tsp. Salt

Mix together with the Crisco, sugar, egg, honey and lemon flavoring. Chill. Roll out to 1/4 inch thick. Cut with Christmas cookie cutters.

Bake at 375 for 8 to 10 minutes.

ICING:

Powdered sugar, water, food coloring, and flavoring. I like to use Cherry, Almond, Lemon, and Orange.

My mom always made these for my brother and I during the Christmas holiday. I make them for my three boys and they love to help make and eat them.

Graham Streusel Coffee Cake

Streusel

1 1/2 cups graham cracker crumbs
3/4 cup walnuts, chopped
3/4 cup brown sugar, packed
1 1/2 teaspoons cinnamon
2/3 cup butter, melted

Batter

1 box Lemon Cake mix
1 cup water
1/4 cup vegetable oil
3 eggs

Maple Icing

1 cup confectioner's sugar
maple syrup

Preheat oven to 350 degrees F. For Streusel, combine crumbs, walnuts, brown sugar and cinnamon. Stir in melted butter. Set aside.

Combine cake mix, water, oil, and eggs. Beat at low speed until moistened, then on high speed for 2 minutes. Pour half the batter into a greased 13 x 9" pan. Bake for 7 minutes, then combine the rest of the batter and half of the streusel topping and spread on top of the half baked batter. Bake for 7 minutes longer, then top with remaining streusel topping. Continue baking for 30-35 minutes. Cool. Drizzle with maple icing (or just plain icing). Yum-yum!
